FDA issues fresh-cut produce guidance

In response to the growing number of disease outbreaks linked to pre-washed and cut fruits and vegetables, the Food and Drug Administration issued last month the "Guide to Minimize Microbial Food Safety Hazards of Fresh-cut Fruits and Vegetables."
The nonbinding guidelines recommend that processors encourage their partners throughout the supply chain to adopt safe practices. These include requiring employees to report any illnesses before starting work, to wash their hands frequently and to cover cuts with waterproof dressings. Processing facilities should have screens on windows, vents, and fans to prevent insects and small animals from entering. Floor drains are to be designed to reduce the chance that water will accumulate. The agency also wants processors to maintain accurate records to facilitate trace-back investigations.
